Tip no. 1 – Use thinly sliced potato slices that can be turned into wafer-thin chips.
Tip no. 2 – Use rice flour and all-purpose flour (maida) along with gram flour (besan). These three flours combined will make the pakoda extra crispy.
Tip no. 3 – A pinch of baking soda will help the pakoda to rise and will make it airy and fluffy from inside.
Tip no. 4 – Add a teaspoon of hot oil in the batter and whisk it well. This technique will further add crunchiness to the pakodas.
