We always associate Afghani cuisine with rich korma and kebabs. The ethnic Afghani food does comprise meaty foods like these, but have you ever wondered what do Afghani people eat for breakfast? Just like ours, eggs are an important part of their breakfast menu and their omelette is just like you you'd expect - dense, flavourful and unutterably delicious. We found an easy recipe of Afghani omelette and realised that we could make it at our homes too, as it requires just a handful of ingredients that we commonly use to cook our own meals.
Eggs, potatoes, onions and tomatoes - these foods are all you need to make Afghani omelette, along with a couple of basic spices to flavour it. We spotted the omelette recipe video on YouTube channel 'Food Fatafat' and couldn't stop ourselves from trying it right away. To our delight, it turned out to be super yummy.

Heat a generous amount of oil in a pan and saute potato cubes till soft and brown. Then add chopped onions and cook till translucent, following which, add chopped tomatoes, salt and black pepper. Cover the pan and cook. Then spread the onion-potato-tomato mixture in the pan to create a layer and crack eggs all over it in such a way that their yolks don't break. Season with salt, black pepper powder, coriander leaves and green chillies. Cover again and let it cook for around 10 minutes.
Cut the omelette into square or diagonal pieces and serve with sauce, bread or pav. Trust us, you're going to love this new and unique omelette in your protein-rich breakfast menu.
