It is believed that kachori was first invented by the Marwadi community. For the unversed, Marwad is a region in southwestern Rajasthan. Being a major trade route in earlier times, it is said that kachori was invented to give a snack to the traders who passed through this route.

How To Make Kachori In Air Fryer | Air Fryer Kachori Recipe
Start by preparing the dough for the air fryer kachori. Add maida, salt, oil, and vinegar to a bowl and mix well. Gradually add water and combine everything together to form a smooth dough. Transfer the dough to a bowl, cover it with a wet cloth, and let it rest for 30 minutes. For the filling, heat oil in a pan and add chopped onions to it. Saute until they turn golden brown, and then add all the dry masalas. Roast for a few seconds before adding in the besan. Now, add the matar and salt and cook again for a minute. Take off the heat and mash the mixture with the back of a spoon. Divide the dough into equal-sized portions and roll them out using a rolling pin. Take a rolled-out dough ball and place the prepared filling in the centre. Seal the edges nicely, forming a kachori shape. Preheat your air fryer to 360 degrees for 5 minutes. Place the kachoris in the air fryer basket and brush them with a little bit of ghee.
