Kolhapuri Paneer Recipe: How To Make Kohlapuri Paneer Curry At Home
To make this paneer curry, you'll need to prepare the kolhapuri masala first. Start by dry roasting whole spices till they are fragrant. Add desiccated coconut and roast till it is golden. Remove all the roasted whole spices to a plate. In the same pan, saute onions, garlic and ginger in oil. Remove from pan. Grind the sauteed onion-ginger-garlic with the roasted whole spices into a smooth paste, and pour in some water if needed. Keep this aside.
For the curry, take the same pan and saute tomatoes in oil till they are mushy. Add spice powders like turmeric, red chilli and asafoetida. Pour in the kolhapuri masala and mix well. Pour water into the masala and season with salt, mix well till the paste become a curry. Add the paneer cubes and let the curry cook till it combines well. Garnish with some coriander leaves while serving. Accompany it with some sliced onions and lemon wedges.
