The most satisfying meals are the ones that carry the essence of our own kitchens and traditions. Nothing quite compares to the wholesome and familiar satisfaction derived from a plate of perfectly cooked lentils and rice, prepared by our darling mother. Recently, a video has captured the attention of the internet, featuring a foreigner preparing the traditional Chaunsa Dal of Uttarakhand. Chaunsa or "Chainsoo" is a type of dal made with black gram dal (urad dal). The dal is typically ground into a coarse paste and then cooked with spices to create a flavourful dish. Chainsoo is often served with rice or Indian bread, and its preparation can vary slightly based on regional preferences.

In the video, the foreigner skillfully demonstrated the preparation of the traditional dish. He began by roasting urad dal chilka and grinding them into a powder. In a separate step, he made a paste using coriander seeds, cumin seeds, peppercorns, garlic, and ginger. Next, in a hot wok with mustard oil, he sizzled dried chilies, hing, and mustard seeds before introducing the previously prepared spice paste. After a thorough cooking session, he added the powdered urad dal, along with turmeric and wheat flour, advising to add water as needed. Viewers were impressed by the foreigner for making our traditional dish, with some even stating, "The guy is more Indian than actual Indians,” and jokingly demanded to “give this man an Aadhar card.” One user commented, “Being Pahadi, I feel good that you know about Pahadi cuisine.” “Chaunsa is also best for the cold. You can have a bowl of it as a hot soup,” claimed another user, while a third gratefully added, “You've educated the world about Indian cuisine!! Forever thankful.” Someone claimed that “Chainsoo with bhaat and Pahadi raita is the best combo.”
