Ingredients of Aloe Vera Ki Subzi

  • 500 gms Aloe Vera
  • 50 ml Mustard Oil
  • 5 gram Cumin Seeds
  • 5 gram Mustard Seeds
  • 100 gram Raisins
  • 20 gram Garlic
  • 8 gram Red Chilli Powder
  • 3-4 Red Chillies Whole
  • 3 gram Turmeric
  • 10 gram Coriander Powder
  • to taste Salt
  • 5 gram Raw Mango Powder
  • 2 gram Mustard Seeds Powder
  • 10 gram Jaggery
  • A pinch of Asafoetida

How to Make Aloe Vera Ki Subzi

Firstly, wash the leaves and remove the thorns. Once done, slit lengthwise and make thin strips almost like ribbon size. It will help absorb more flavours.

Now pressure cook the leaves with little water until one whistle.

Mix dry ingredients like dhania powder, turmeric powder, amchur, salt, a little jaggery and a little water. Now, pour it into hot mustard oil and roast till it looks glazed. Keep stirring.

In another pan, add hing, oil, cumin seeds, broken dry red chillies and let them crackle. Add the boiled Aloe Vera strips and toss them well. Now add this mix to the roasted masala.

Add some raisins, chopped green chillies, coriander leaves, toss and mix it well.

Finally, sprinkle a little bit of mustard seeds (rai) powder and mix again. Let this subzi rest for 2-3 hours before serving.

It tastes great the next day!
