Ingredients of Anda Methi Bhurji

  • 250 Gram Methi
  • 2 Onions, chopped
  • 2 Tomatoes, chopped
  • 1-2 Green Chillies
  • 1 tbsp Garlic (grated)
  • 1 tsp Ginger (grated)
  • 1 tsp Cumin Seeds
  • A pinch of hing
  • 1 tsp Coriander Seeds
  • 1/2 tsp Turmeric
  • 1 tsp Garam masala powder
  • Salt to taste
  • Red chilli powder to taste
  • Coriander leaves for garnishing
  • 5 Eggs

How to Make Anda Methi Bhurji

Heat ghee/oil in a pan. Saute cumin seeds till they change colour.

Saute onion, green chillies and garlic.
3.
Saute tomatoes and garlic with salt, red chilli powder, coriander seeds and turmeric powder.
4.
Add methi leaves and cook till they wilt. Break the eggs onto the mixture and whisk till they cook.
5.
Add garam masala powder, Mix and serve with the garnishing of coriander leaves.
