Chicken Malai Kofta is a shahi-style kofta recipe with a well-balanced taste with mild spices.

Ingredients of Chicken Malai Kofta

  • 500 gms Boneless chicken
  • 3 Bread crumbs
  • 3 large Onion, finely chopped
  • 2 tbsp Ginger-garlic paste
  • 2 nos Green Chillies, finely chopped
  • 2 tsp Garam Masala
  • 2 tsp Coriander Powder
  • 1 tsp Cumin powder
  • 1 tsp Black pepper powder
  • to taste Salt
  • Oil
  • 2 medium Tomatoes, finely chopped
  • 7-8 Soaked cashew nuts
  • 1/2 cup Cream
  • 1 tsp Red chilli powder
  • Coriander Leaves, chopped

How to Make Chicken Malai Kofta

Take a blender and grind the boneless chicken till it is minced. Remove the minced chicken from the bowl and add chopped onions, ginger-garlic paste, green chillies, garam masala, coriander powder, cumin powder, black pepper powder, salt and bread crumbs.

Grease your hands a little bit and make small, lemon-sized balls with the minced chicken. Repeat the process until all the meat is being used up.

In a pan, heat some oil. Once heated, fry the minced chicken balls to golden perfection. Remove them from heat and place them on a paper towel to absorb excess oil.

In another pan, heat some oil and add chopped onions, ginger-garlic paste, soaked cashew nuts, chopped tomatoes, and salt, and mix well.

Add spices – salt, red chilli powder, garam masala, coriander powder – and mix all ingredients well. Cover the lid of the pan and let the spices and veggies blend in each other’s flavours.

Once cooked, let it cool and smoothen the mixture in a blender. The result would be a smooth paste. Transfer the mixture back to the pan.

Add a little bit of oil and let the mixture cook for 2 minutes. At this point add water as desired and adjust spices in the gravy. Add the cooked chicken balls to the gravy and cover the lid of the pan.

Add cream to the gravy and mix well. Adjust the salt level of the Chicken Malai Kofta. Garnish with chopped coriander leaves and voila! It’s done!
