Ingredients of Chivda Aloo Lachha Namkeen
- 4 Medium Potatoes
- 1 cup chivda (flattened rice flakes), washed
- 1/2 cup peanuts
- 1/2 cup cashews
- 1/2 cup almonds
- 1 tsp red chilli powder
- 1 tsp chaat masala
- 1 tsp cumin powder
- Salt, as per taste
- 2 tbsp oil

Wash and peel the potatoes, then chop them vertically into thin strips. Soaked the chopped potatoes in cold water for about 20 minutes. Drain the water and pat dry them using a kitchen towel.

In a small bowl, mix the peanuts, cashews, and almonds with a little oil and salt as per your taste levels. Preheat the oven to 180°C and place the nuts on a baking sheet. Let them bake for 5-7 minutes.

In another bowl, mix red chilli powder, chaat powder and cumin powder in some oil. Toss the chopped potatoes in the mixture and make sure they are coated evenly. Preheat the oven to 180°C and then spread the coated potato strips evenly.

Bake the potatoes for 20 minutes, but keep checking every 5 minutes to ensure they don’t get burnt. The potatoes should be crispy and golden brown in colour.

On another baking sheet, spread the chivda evenly and let it bake for 5-7 minutes. Keep an eye on them so that they turn out to be slightly crispy and toasted.

Once the potatoes and chivda are done, transfer them into a large mixing bowl. Add the prepared nuts over them. Sprinkle some chaat masala over the mixture and give a good mix.

Let the chivda aloo lachha namkeen cool down completely before transferring it to an airtight container, and enjoy!
