How to Make Coriander Upma

Coriander Upma Recipe: Coriander Upma or Kothmir Upma is a refreshing take on regular rava upma. This simple dish is packed with extra flavours of coriander infused into the upma itself. It makes for a healthy breakfast or a light yet tasty evening snack.

Ingredients of Coriander Upma

  • For the upma:
  • 1 cups semolina/ rava
  • 1 tsp urad dal
  • 1 tsp mustard seeds
  • 1 Onion, chopped
  • 2 tbsp coriander leaves
  • cashew nuts (optional)
  • 6 curry leaves
  • 1 tsp sugar
  • Pinch of hing/ asafoetida
  • Salt to taste
  • 2 tbsp oil
  • For the chutney:
  • 1/2 cup coriander leaves
  • 3 green chillies
  • 1/2 tsp lemon juice
  • 1/2 tsp cumin seeds
  • 1/2 tsp sugar
  • to taste salt

How to Make Coriander Upma

In a mixer, add the chopped coriander leaves, green chillies, lemon juice, sugar and salt. Blend well to form a thick green chutney. Set aside.

In a kadhai or saucepan on medium flame, roast the rava and curry leaves. Chopped cashews are optional. Keep stirring and continue till the rava turns light brown. Turn off the heat and transfer the mixture to a bowl.

In the same kadhai or pan, heat oil and add the mustard seeds and urad dal. Then add the onions, salt, sugar and asafoetida (hing). Saute until the onions turn translucent.

Add the roasted rava and continue to saute.

After a minute or two, add the green chutney prepared earlier to the kadhai. Mix all the ingredients well.

Add 2-3 cups of hot water and stir thoroughly. Once all the water has been absorbed by the rava, cover for 2 minutes, squeeze some lemon juice and allow to cook on medium flame. Turn off the heat once done.
7.
Taste and adjust salt and spices. Garnish with coriander and enjoy hot.
