  • 3-4 medium-sized potatoes
  • 1 cup besan (gram flour)
  • 2 tbsp rice flour
  • 1/2 tsp red chili powder (adjust to your spice preference)
  • 1/4 tsp turmeric powder
  • 1/2 tsp ajwain (carom seeds)
  • 1/4 tsp asafoetida (hing)
  • Salt to taste
  • Water (for making the batter)

How to Make Crispy Aloo Bhajjiya

Peel the potatoes and wash them thoroughly. Using a grater, grate the potatoes.
In a mixing bowl, combine gram flour, rice flour, red chili powder, turmeric powder, ajwain, asafoetida, and salt. Mix the dry ingredients thoroughly.
Gradually add a little water while stirring to form a smooth but thick batter. Ensure there are no lumps in the batter.
Add the grated potatoes to the batter and mix gently. Ensure that the grated potatoes are evenly coated with the besan mixture.
Heat oil in a deep frying pan or kadai over medium-high heat.
