Ingredients of Dried Mango Bars

  • 2 cups All Purpose Flour
  • 1/2 cup Confectioner's Sugar
  • 1 cup Butter
  • 1 cup Water
  • 200 gms Dried Mango
  • 1/4 cup All Purpose Flour
  • 1 tsp Baking Soda
  • 2 Large Eggs
  • 3/4 cup Brown Sugar
  • 1 tsp Vanilla Extract
  • Confectioner's Sugar (for dusting)

Set the oven to 350°F. Grease a pan.

To make the crust, process the confectioner's sugar and all-purpose flour in a food processor. To blend thoroughly, pulse a few times. Add the butter, combine, and shape the dough into a soft ball.

Transfer the dough to the prepared pan. To create a single, even layer, spread the dough with your fingertips. Until golden brown, bake for 15 to 20 minutes.

Bring water to a boil in a saucepan to prepare the mango filling. Cook the dried mangoes for 10 minutes, or until they are tender. Mangoes should be rinsed, then placed in a food processor and pulsed until roughly chopped.

In a bowl, combine baking soda and all-purpose flour by whisking the ingredients together.

Eggs and brown sugar should be combined in a different bowl. Mangoes to be added after adding vanilla. Add the flour mixture gradually.

Pour the mango mixture over the crust when it's done baking and spread it out evenly. When the centre is firm but not hard, bake for another 30 to 35 minutes. Don’t overcook.

Allow to cool, before cutting into squares. Before serving, sprinkle confectioner's sugar over top. Note: If you do not have a food processor, you can use 2 forks to make the crust.
