Bite sized pieces of eggplant boiled and dressed in soya sauce, vinegar and garlic

Ingredients of Eggplant Salad

  • 1 medium sized eggplant
  • 1 Tbsp garlic - chopped
  • 4 red chillies - chopped
  • 2 1/2 spring onion - chopped
  • 2 tsp coriander, chopped
  • 1 tsp soya sauce
  • 1/2 tsp vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar

How to Make Eggplant Salad

  • 1.Peel the eggplant and cut it into finger-sized pieces. Let it boil for five minutes. Drain and keep it in the ice to cool.
  • 2.In a separate bowl add garlic, chillies, coriander, vinegar, soya sauce, sesame oil and sugar. Mix well to form a dressing.
  • 3.Arrange the boiled eggplants pieces in a bowl and pour the dressing on top and serve.
