Ingredients of Goan Chicken Croquette

  • 1/2 Kg boneless chicken (washed, cut and with salt added)
  • 2 large red onions, sliced
  • 2 green chillies , finely chopped
  • 2 large tomatoes , finely chopped
  • 2 tsp ginger garlic paste
  • 1 cups coriander leaves , finely chopped
  • 1 tbsp jeera
  • 1/2 tbsp peppercorn
  • 1 ½ pieces cinnamon stick
  • 1 ½ tbsp turmeric/ haldi
  • 12 cloves
  • 3 pieces cardamom
  • 2 dry red chilli (Kashmiri, preferable)
  • Oil for frying
  • 2 soft bread slices (cut into cubes)
  • 2 cup breadcrumbs
  • 3 Eggs

How to Make Goan Chicken Croquette

To make the masala, grind the jeera, peppercorn, cinnamon stick, turmeric, cloves, cardamom and dry red chillies to form a powder.

In a heavy-bottomed vessel or kadhai, heat 1 tablespoon of oil and half-fry the onions, green chillies, ginger garlic paste, tomatoes, and chicken pieces.

Add 1 cup of water, cover and cook for 10 minutes on low flame. Later, allow it to cool.

Add the mixture to a blender and grind it together to form a coarse mixture.

Remove the mixture into a big bowl. Add the cut bread slices, chopped coriander leaves and the ground masala prepare

Break two whole eggs and 1 egg yolk into the bowl. Keep the white of one egg in a separate, smaller bowl. Mix the ingredients in the big bowl thoroughly.

Make balls of the chicken mixture and shape them into short cylinders.
8.
Using a beater, whisk the egg white to form a froth.
9.
Dip the cylinder shapes into the whisked egg, coat them with breadcrumbs and deep fry until they turn brown.
10.
Your croquettes are ready! Serve them with sauce, cheesy dip, garlic mayo or chutney.
