Start by washing and boiling the potatoes. Once done, cut them into bite-sized cubes.
Now, add curry leaves, cumin seeds, mustard seeds, heeng, and green chillies to a pan of heated oil. Allow them to splutter.
Once done, add the cubed potatoes, garlic, and seasonings (salt, sugar, and turmeric powder), and stir well. Cook for 3 to 4 minutes.
After cooking, add the mashed potatoes and mix well. Ps: Do not mash the cubed potatoes.
Add some water to make a gravy. (Make sure to add it gradually.) Stir well, cover and cook for around 4-5 mins.
Once done, garnish with fresh coriander leaves and serve hot!
