Ingredients of Greek Cake
- 100 gm butter
 - 100 gm castor sugar
 - Grated rind 1 orange
 - Juice 1 lemon
 - 2 eggs
 - 150 gm semolina
 - 2 tsp baking powder
 - 100 gm almond powder
 - 1 tsp cinnamon powder
 - Syrup:
 - 150 gm sugar juice
 - 1 lemon juice
 - 1/2 orange
 - 1 Tbsp candied peel
 - To Serve:
 - 6 Tbsp pomegranate kernels
 - 1 Tbsp rum / orange juice
 - Mint sprigs
 
How to Make Greek Cake

Blend all the cake ingredients together and beat for 1 minute.

Turn into a greased and lined 8" round tin and bake at 210 degrees C for 10 minutes and then for 25 minutes at 180 degrees C.

Turn out of tin.

Simmer the syrup ingredients together for 5 minutes and pour over cake.

Serve with pomegranate mixed with rum.
6.
Serve garnished with mint sprigs.
