Ingredients of Guava & Pomegranate Modak
- For guava mixture
- 1/4 Cup heavy cream
- 1/4 Cup milk powder
- 1/4 Cup desiccated coconut
- 1/8 Cup powdered sugar
- 1 Tbsp guava paste with skin
- 4 green cardamom, shelled and seeds powdered
- For Pomegranate stuffing
- 1 Cup khoya
- 1/4 Cup Dried Pomegranate powder
- 1/4 Cup sugar
- A few leaves of Silver vark
- Ghee to grease palms when moulding (optional)

In a heavy bottomed pan [ kadhai] over low medium heat, combine heavy cream, milk powder, desiccated coconut, sugar, guava paste, green cardamom powder, stir the mixture well, until the guava paste soften and the mixture leaves the sides of the pan.

Remove from heat, transfer it on a tray, spread evenly and set aside to cool for about 10 minutes, uncovered.

Meanwhile reheat a heavy bottomed pan, combine khoya, pomegranate powder paste, sugar, stir the mixture well, until the pomegranate khoya soften and the mixture leaves the sides of the pan.

Remove from heat, transfer it on a tray, spread evenly and set aside to cool

Knead both the mixture separately with greased hands, using ghee, grease the inner side of the mould. First spread the guava mixture evenly in the modak mould, place the pomegranate stuffing in the centre and close the mould. Scrape off the excess mixture.

Demould the modak and repeat with the rest of the mixture, garnish with silver vark. Offer these modaks as a prasadam to Ganpati Bappa on this Chaturthi.
