Ingredients of Healthy Medu Vada

  • 1 Cup split urad dal (skinned black gram lentils)
  • 2-3 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • A handful of curry leaves, finely chopped
  • 1/2 tsp cumin seeds
  • Salt to taste

Rinse the urad dal and soak it in water for about 4-5 hours or overnight.

Drain the water and grind the urad dal into a smooth batter. You can add a bit of water if necessary.

Transfer the batter to a mixing bowl and add the chopped green chilies, grated ginger, curry leaves, cumin seeds, and salt.

Preheat your air fryer to 350°F (180°C) for about 5 minutes.

To shape the vadas, wet your hands and take a small portion of the batter. Make a hole in the centre, resembling a donut, and place it in the air fryer basket.

Lightly spray the vadas with cooking oil or use a pastry brush to apply a thin layer of oil.

Air fry the vadas at 350°F (180°C) for 12-15 minutes or until they turn golden brown and crispy. Flip them halfway through for even cooking.
8.
Once your healthy Medu Vada is ready, serve them hot with your preferred healthy sides.
