Kwanti is a popular Nepalese curry made with nine types of lentils and pulses.

Ingredients of Kwanti
- Boiled pulses
- 1/4 cup bengal gram
- 1/4 cup green peas
- 1/4 cup black eyed beans
- 1/4 cup chick peas
- 2 Tbsp white kidney beans
- 2 Tbsp whole green grams
- 2 Tbsp lentil with skin
- 2 Tbsp lentil without skin
- 2 Tbsp clarified butter
- 4-5 cloves
- 2-3 cinnamon
- 3-4 cloves garlic
- 2 Tbsp chopped onions
- 1/2 tsp carom seeds
- 2-3 whole red chillies
- 1 tomato-chopped
- 1/2 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/2 tsp roasted cumin powder
- 1/2 tsp garam masala
- 1/2 tsp turmeric powder
- Salt to taste
- Mustard oil to shallow fry
How to Make Kwanti

Heat mustard oil in a pan, bring to smoke point.

Add red chilli, cloves, cinnamon, garlic cloves and carom seed.
3.
When it crackles, add chopped onions & tomatoes and saute for 2 minutes.
4.
Now add the boiled pulses followed by seasoning.
5.
Mix well and cook for 5 more minutes.
6.
Garnish with clarified butter and serve.
