Soak dried red chilli for 10 mins. After that, make a smooth paste of soaked chillies, garlic, ginger and tomato. Keep it aside; this is the base of the gravy.
2.
Take 80% cooked baby potatoes and poke tiny holes with fork or skewers.
3.
Now in a pan add oil and fry potatoes until golden brown from all sides. Remove them once done.
4.
In the same pan, add bay leaf, chopped onions and cook for 2 minutes.
5.
Now add chilli and garlic paste and the dried masalas like dhaniya powder, jeera powder, hing, chaat masala, haldi, red chilli powder and mix well.
6.
Let the masala cook till it leaves oil on the sides.
7.
Now add salt and the baby potatoes and stir everything well together. You can add water for a consistency of your liking or have it as it is.
