Lemongrass Noodle Soup Recipe: This heart-warming soup with the distinct flavour of lemon grass along with spices such as ginger and garlic along with carrot and beans make for a perfect one pot meal in the winter season.

Ingredients of Lemongrass Noodle Soup

  • 2 Lemon grass sticks
  • 100 gms carrots, chopped
  • 50 gms French beans
  • 5 ml soya sauce
  • 4 Red chillis
  • 10 gms peeled garlic, chopped
  • 1 inch ginger, chopped
  • 10 gms rice noodles
  • to taste salt
  • 2 gram spring onion, chopped
  • 5 ml oil
  • 600 ml water

How to Make Lemongrass Noodle Soup

  • 1.Make a paste of lemon grass with a little water and strain it.
  • 2.Soak the red chillies in warm water for approximately 20 minutes.
  • 3.Make a coarse paste of soaked red chilli with chopped ginger and garlic.
  • 4.Heat the pan and add oil, then add the vegetables and sauté well.
  • 5.Then add the red chilli, ginger and garlic paste stir well.
  • 6.Add the lemon grass water and rice noodles and boil it for 4 minutes. .
  • 7.Season it with salt and soya sauce. Garnish with spring onions and serve it hot.
