Baked fish with chillies and mango powder, straight from Rajasthan.
Ingredients of Macchi ke Sooley
1 kg surmai steaks (Haddock)
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp turmeric powder
1 tsp red chilly powder
Sea salt, to taste
1 tsp dry ginger powder
1 tsp dry mango powder
3 - 4 green chillies
How to Make Macchi ke Sooley
1.Preheat the oven
2.In a pan, dry roast the cumin seeds and the coriander seeds and then pound in a mortar and pestle.
3.Add burnt garlic and burnt onion and grind further.
4.Add turmeric powder, red chilly powder, sea salt, dry ginger powder, dry mango powder, 3 - 4 green chillies, chopped coriander stems, lemon juice, clarified butter, water and grind further till it becomes a fine paste.
5.Marinate the fish in this paste.
6.In a roasting pan, put a spoon of clarified butter and brush the bottom of the roasting tin
7.Place the fish side by side, and put it in a pre heated oven of 160 degrees for 10 minutes till its nice and crispy from outside.
8.Garnish with fresh coriander leaves and lime juice and serve hot.
