This fried fish marinated in turmeric and cooked in mustard, garlic and tomatoes is a typical Oriya dish and goes extremely well with rice.

Ingredients of Machcha Besarou

  • 1 rohu fish
  • 4 Tbsp mustard oil
  • For the marination:
  • Turmeric powder
  • Salt
  • For the gravy:
  • 1 Tbsp mustard oil
  • 1/4 tsp rai (mustard seeds)
  • 1/4 tsp kalonji (samal fennel)
  • 1/4 tsp methi seeds (fenugreek seeds)
  • 1/4 tsp fennel powder
  • 1/4 tsp cumin powder
  • 4 whole red chillies
  • 2 tsp curry leaves
  • 2 tsp chopped garlic
  • 2 tsp mustard paste
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 1/3 tsp salt
  • 1/2 cup water
  • Tomato, chopped into 8 pieces
  • 3 green chillies
  • Coriander leaves
  • Lemon juice

How to Make Machcha Besarou

Clean the fish and marinate it in turmeric powder and salt.

In a pan, heat the oil, add the marinated fish and fry it well.

Take the fish out and keep aside.

Heat the mustard oil in another pan and to this add the rai, kalonji, methi, fennel powder, cumin, red chillies, curry leaves, garlic and mustard paste. Saute well.

Then add turmeric, red chilli powder, salt, water, tomatoes and green chillies.

Cover and cook for 2 minutes. Now add the fried fish and cook it for 10 minutes (covered).
7.
Garnish with coriander leaves and lemon juice. Serve hot.
