Ingredients of Mini Lasagna Cups

  • 10 Nos Lasagna noodles
  • 1 cup Tomato sauce
  • 1 cup Paneer, grated
  • 1 cup Mozzarella Cheese, shredded
  • 1 cup Mixed vegetables, finely chopped
  • 1 nos Medium onion, finely chopped
  • 2 nos Garlic cloves, sliced
  • 2 tbsp Dry herbs
  • to taste Salt
  • to taste Pepper
  • 4 tbsp Oil

How to Make Mini Lasagna Cups

Preheat the oven to 190°C. Take a muffin tin and grease it with oil/ghee. Make sure that the utensil is oiled properly.

Take a big pan and fill it with water. Bring it to a boil and add one tablespoon of salt to it. Add lasagna noodles to it and cook as per the instructions written on the package. Once cooked, drain the water from the lasagna and keep it aside.

In another pan, heat oil over medium heat. Now add minced garlic and chopped onions, and saute until cooked and translucent.

After onions and garlic are cooked, add chopped mixed vegetables – bell peppers, capsicum, sweet corn, spinach, etc. – and cook for 5-6 minutes until they are tender.

Now add tomato sauce, dry herbs, salt and pepper to the pan. Mix well so that all the ingredients are combined well. Let the mixture sit on the stove for 5 minutes on simmer and then remove from heat.

Take the boiled lasagna noodles and cut them into small rectangles. Place each noodle square into a muffin cup and press it against the bottom to form the shape of a cup.

To this, add a spoonful of tomato sauce and vegetable mixture. Top it with crushed cottage cheese and grated mozzarella cheese. Repeat the process until the filling has filled the cup mould, and sprinkle some cheese on top.

Bake the mini lasagna cups in the preheated oven for 20 minutes or until the cheese has melted. Once done, set it aside to cool down.

Remove the lasagna cups from the oven by using a knife and let them cool. And it’s done! Your mini lasagna cups are ready to serve!
