Ingredients of Navratan Pulao

  • 2 Cups Basmati rice (80% Cooked)
  • 80 gram Paneer cubes
  • 1/4 cup French Beans (Chopped)
  • 1 tsp Ginger (Chopped)
  • 1 tsp Garlic Paste
  • 1/4 cup Matar (Boiled)
  • 1 tsp Lemon Juice
  • 1/2 cup Potato (Cut into small pieces)
  • 1/2 cup Cauliflower Florets
  • 1 medium Carrot (Chopped)
  • 2 tbsp Saffron Milk
  • 1 Bay Leaf
  • 2 Black Cardamom
  • 3 Green Cardamom
  • 3 Cloves
  • 1 tsp Cumin Seeds
  • 1 inch Cinnamon
  • 5 Almonds
  • 5 Cashew Nuts
  • 1/4 cup Oil
  • 1 tsp Raisins
  • 1 tbsp Ghee

How to Make Navratan Pulao

Cook the rice about 80% and set aside for sometime.

Now, heat 1/4 cup oil in a kadhai over medium heat. When it is hot, add the potato pieces and fry them for 30 - 40 seconds.

Add chopped carrots and stir, continue cooking for about 30 seconds then add French beans and cook them with constant stirring until all the vegetables are slightly soft and mushy

Take them out of the oil. Use the same oil to fry the paneer until it becomes light brown and remove them once done.

Put cauliflower in the same kadhai and fry it till it becomes slightly brown.

Once the cauliflower is roasted, add boiled green peas (matar), cashews, raisins and almonds and fry them for about 30 seconds, stirring occasionally.

Add finely grated ginger, garlic paste, cloves, bay leaf, cinnamon and green cardamom and fry for 30 - 40 seconds while stirring continuously.

Add cooked basmati rice, salt, ghee and mix everything well, cook on a medium flame, stirring occasionally.

Heat ghee in another pan, when it gets hot, add cumin seeds and mix well. When the cumin starts spluttering, add saffron milk and 2 tablespoons water. When it starts boiling, add it to the pan with a pulao and mix well.

Add pre-fried vegetables like potatoes, carrots, French beans, cauliflower and paneer.

Mix everything well. Add lemon juice and mix well again. Cover the pan and simmer it on a medium flame for about 10 minutes.

Serve and enjoy!
