Pineapple and Coconut Tarte Recipe

A decadent tart filled with a pineapple and coconut mixture. Served hot with a scoop full of peanut butter ice cream. It cannot get better than this. Yum!

Ingredients of Pineapple and Coconut Tarte
- For the tarte:
- 1/2 cup maida
- 3 Tbsp salted butter
- 1/4 cup caster sugar
- For the filling:
- 3/4 cup pineapple
- 3 Tbsp dry coconut
- 3 Tbsp raisin
- 2 Tbsp butter
- 2 Tbsp brown sugar
- A pinch of star anise
- For the ice-cream:
- 2 Tbsp peanut butter
- 1/2 cup vanilla ice-cream
- 2 Tbsp nougat (confectioneries made with sugar, honey, roasted nuts)
How to Make Pineapple and Coconut Tarte
HideShow MediaTo prepare tarte shells:

Make a soft dough of caster sugar, butter and flour.

Roll them in flat roundels and place them in mini tart moulds lined with butter and bake till done.

For the pineapple filling:

Heat butter in a pan and saute pineapple, raisins and grated coconut.

Add brown sugar and cook for 5 minutes.
6.
Fill the tarte shells with the pineapple filling.
7.
Sprinkle some grated cheese on top and bake for another 5 min.
For the peanut butter ice cream:
1.
Mix peanut butter, nougat to vanilla ice cream and freeze well.

To Serve: Serve the tarte hot with a scoop of peanut butter ice cream.
