Ingredients of Popped Amaranth Power Bars

  • 1 Cup puffed amaranth
  • 1/2 cup hemp seeds
  • 2 tsp lemon zest
  • 1/2 cup pista, finely chopped
  • 1/2 cup dried cranberries (can be replaced with chopped raisins)
  • 1/2 cup honey
  • 1/2 cup almond butter/peanut butter
  • 1/2 cup dessicated coconut (optional), roasted
  • 1/2 cup flax seeds
  • 1/4 tsp black salt (optional)

How to Make Popped Amaranth Power Bars

Line a rectangular cake tray or baking tray with baking paper and keep aside.
In a pan, mix the nut butter and honey. Whisk well till completely combined.
Melt the mixture over medium heat and cool for 5 minutes.
Chop the pista and roast in a pan. Once roasted spray with a little oil and add a little salt. (the salt is optional)
In a large mixing bowl add the dry ingredients - the puffed amaranth, hemp seeds, lemon zest, roasted pista cranberries, flax seeds and desiccated coconut.
Once the honey and nut mixture has cooled, mix it into the dry ingredients and stir till well combined.
Transfer this mix to the prepare baking or dish. Press down till you get an even surface and flat layer atleast 1 cm thick. Refrigerate upto 4 hours.
Lift the parchment paper out and place on a table top. Use a knife to cut equal sized bars.

Recipe Notes

1. Nut butter: Ideally use homemade nut butters, you can try my nut butter recipes

2. Cranberries have a slightly tart flavour and add a nice dimension, you can easily replace this will another berry or raisins

3. While transferring the mixture and tapping down, if the mixture feels too sticky, you can place another parchment paper on top and use a rolling pin

4. Desiccated coconut adds a lovely texture, you can also roast it slightly before adding to the mixture. This is optional

5. The salt adds another dimension, so I highly recommend adding it in

6. Hemp Seeds are a great source of protein, they can be replaced with an equal amount of another seeds or puffed amaranth

7. Lemon Zest: Use a zester or micro blade to remove the zest. Ensure you get the green part and not all of the white under skin. This adds a lovely zing or freshness to the bars.

8. All the seeds can be replaced with equal quantities of seeds allowed specifically on your fast rules.
