Ingredients of Prawn Rissois
- For the pastry:
- 1 cup flour
- 1 cup water
- 1 Tbsp butter
- Salt to taste
- For filling:
- 10-12 prawns - boiled
- 1 onion - chopped
- 3 Tbsp butter
- 4-5 Tbsp flour
- 3 cups prawn stock
- 2 cups milk
- Pinch of grated nutmeg
- Salt
- Pepper to taste
- To finish:
- 2 eggs, lightly beaten
- 1 cup bread crumbs seasoned with salt and pepper
- Oil, to deep fry
How to Make Prawn Rissois

Peel the prawns and cut them in small pieces.

Now take a pan and saute onions with butter.
3.
Add flour and mix well.
4.
Pour in the stock, followed by milk and cook for 2 min stirring constantly.

Add salt, pepper and nutmeg.
6.
Mix well and keep aside.
For the Pastry:
1.
Take water and butter in a pan and bring to a boil.
2.
Once the butter melts, add salt.
3.
Now add flour, all at once and stir vigorously until the mixture leaves the side of pan and form a small ball.

Transfer this mixture to a board and knead a little.
5.
Cover and keep aside for half n hour. Now, roll the pastry dough with the help of a rolling pin until fine and smooth.
6.
Place a spoonful of prawn filling on the pastry, fold and cut in any shape as desired.
7.
Dip in the beaten eggs and then in breadcrumbs.
8.
Deep fry until golden brown and serve.
