Ingredients of Pudina Aloo Curry

  • 4 medium potatoes, cubed
  • 1 cup fresh mint leaves, chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2-3 green chilies, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • Red chilli powder to taste
  • 1 tsp garam masala
  • 1/2 teaspoon coriander powder
  • Salt to taste

How to Make Pudina Aloo Curry

Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.

Add chopped onions and saute until they turn golden brown.

Add ginger-garlic paste and chopped green chilies. Saute for another minute until the raw smell disappears.

Add the tomato puree, spice powders and salt. Cook the masala until the oil starts to separate from it.

Add potatoes and coat them evenly with the masala. Cook for about 5 minutes.

Pour in enough water to cover the potatoes, and bring the mixture to a boil. Reduce the heat, cover, and let it simmer until the potatoes are tender (around 10-12 minutes).

Add the mint leaves and garam masala, and let it simmer for another 2-3 minutes. Serve hot!
