Ingredients of Raspberry and Balsamic Dome

  • 450 gms dark chocolate
  • 450 gms butter
  • 225 gms sugar
  • 125 gms water
  • 8 nos egg
  • 30 nos egg yolk
  • 150 gms castor sugar
  • 375 gms honey
  • 2 kg dark chocolate
  • 875 gms whipped cream
  • 900 gms melted butter
  • 80 gms gelatin
  • 20 nos egg white

How to Make Raspberry and Balsamic Dome

  • 1.First, prepare silk sponge by mixing dark chocolate, butter and mix sugar syrup and egg at last and then bake in a tray at 180 C for 25 minutes.
  • 2.Now make the chocolate dome mixture by mixing sugar and eggs in double boiler. Melt the chocolate and butter, keep it aside.
  • 3.Soak gelatin in cool water, and add sabayon and chocolate mix to the mixture. Add soaked gelatin and fold whipped cream in mixture of chocolate and butter.
  • 4.After that beat the egg whites and make meringue, then add the raspberry pure and balsamic in dome mixture and set it in dome mould.
