A delicious and healthy salad with oven roasted beets, snowpeas, feta cheese, cucumbers and carrots. Drizzled with a light dressing of olive oil and lemon juice.

Ingredients of Roast Beet, Feta and Cucumber Salad

  • 300 gm oven roasted beets
  • 200 gm cucumbers
  • 200 gm feta cheese
  • 200 gm snowpeas
  • 150 gm red leaf lettuce
  • 100 gm red onions, sliced
  • Salt and pepper, to taste
  • 150 gm carrots, diced and cooked
  • 80 gm olive oil
  • 50 gm lemon juice

How to Make Roast Beet, Feta and Cucumber Salad

  • 1.Dice beets, cucumbers, carrots. Slice the onions. Cut the snowpeas in half.

  • 2.Crumble the feta cheese. Tear the lettuce leaves.
