How to make Sambhariyu Shaak

Once all the vegetables are stuffed, add in a pressure cooker and let it cook for 2-3 whistles and that’s it! That’s how easy it is to prepare this typical Gujarati curry at home.

Ingredients of Sambhariyu Shaak

  • 2-4 Potatoes
  • 2-4 Brinjal
  • 1 large Sweet Potato
  • 2-4 Mirchi
  • 2-3 Ivy gourd
  • 2 tbsp Besan
  • 2 tbsp Coconut powder
  • 2 tbsp Peanut powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin powder
  • 1 tsp Red chilli powder
  • 1 tsp Haldi
  • 1 tsp Ginger chilli paste
  • 2 tbsp Lemon Juice
  • 2 tbsp Refined oil
  • Chopped coriander leaves
  • 2 Bay leaves
  • 2 Green Cardamom
  • 2 Cloves
  • 2-3 Black peppercorns
  • 1 cup Tomato Puree
  • Salt to taste

How to Make Sambhariyu Shaak

In a bowl mix besan, coconut powder, peanut powder, coriander powder, cumin powder, red chilli powder, lemon juice, oil and coriander leaves and mix together to form a slightly dry mix.

Take all your vegetables and slit them in the middle.

Stuff the mix in all the vegetables.
4.
Heat some oil in a pressure cooker and add whole spices.
5.
Add tomato puree and let it cook. If you have any stuffing left, add that too.
6.
Add some haldi and garam masala and cook for a while.
7.
Add the stuffed veggies and give it a light mix. Close the lid and cook for 2 whistles. Take off the lid and serve hot.
