Ingredients of Alphonso Mango Chocolate Delicia Tart
For Chocolate Tart
60 gram Butter unsalted
40 gram Shifted Icing sugar
85 gram Shifted flour
15 gram Cocoa powder
60 gram Almond powder
2 gram Salt
1 nos Whole eggs
For Mango mousseline
50 ml Milk
50 gram Alphonso Mango puree
15 gram Sugar
20 gram Egg Yolk
8 gram Cornflour
6 gram Butter
150 gram Whipped cream
For Mango Ganache
50 gram Fresh cream
35 gram Liquid glucose
70 gram Liquid glucose
15 gram Butter
250 gram white chocolate.
How to Make Alphonso Mango Chocolate Delicia Tart
For Chocolate tart :
1.Cream butter and Icing sugar till light and fluffy.
2.Add the egg and blend well. Then add the flour sieved with cocoa powder and salt.
3.Add the almond powder and knead well to make a smooth dough.
4.Store in the chiller. Roll out the dough 2m thick and line the tart Mould. Bake it at 180 degree C for 20 minutes.
For Mango mousseline :
1.Boil milk and the mango puree.
2.Mix the eggs with sugar and corn flour.
3.On slow heat add the above mix to milk and mango puree.
Stir well till it thickens.
4.Add the butter and set aside for cooling. Once cool fold in the whipped cream.
For Mango ganache :
1.Boil the fresh cream with liquid glucose and mango puree.
Add the chocolate and blend it well.
ASSEMBLY: Fill the Chocolate tart with Mango mousseline. Place the spiral mango ganache in the centre and arrange fresh Mango dices around it.
