Ingredients of Thai Corn Fritters

  • 500 gms Fresh or Frozen Corns
  • 3 Spring Onions (Chopped)
  • 1 large Red Chilli (Chopped)
  • 1 tsp Grated Ginger
  • 2 tbsp Coriander Leaves (Chopped)
  • Juice Of 1 Lemon
  • 1 tsp Soya Sauce
  • 1 tsp Sesame Oil
  • to taste Black Salt
  • 1 Egg
  • 90 gram All Purpose Flour
  • 1/2 tsp Baking Powder
  • 4 tbsp Coconut Milk
  • Oil To Fry

How to Make Thai Corn Fritters

To Make The Batter

Add flour, black salt and baking powder to a medium-sized mixing bowl. Gradually pour in coconut milk while whisking to make a smooth batter and then add the oil.

If you need to defrost the corn, boil water in a saucepan and add the corn. Let it boil for 4-5 minutes and then drain.

Mix the corn into the bowl containing the batter.

Add chopped spring onion, red chilli, grated ginger, coriander, lime juice, soy sauce, sesame seed oil, salt, egg, all-purpose flour, baking powder. Mix everything together.

Now, heat oil in a non-stick pan. Add a spoonful of corn batter to the pan to make the fritters. Fry for 3 to 4 minutes on each side. Remove the fritters from the pan and serve with some ketchup.
