Ingredients of Truffle Edamame Dumpling

  • For the filling:
  • 100 gm edamame beans
  • 100 gm potato
  • 30 gm salted butter
  • 30 gm cream
  • 100 ml water
  • 10 gm truffle past
  • Salt and pepper, to taste
  • For the dim sum dough:
  • 100 gm wheat starch
  • 100 gm potato starch
  • 400 ml water

How to Make Truffle Edamame Dumpling

For the filling, blend the edamame beans and water to make a paste. Add mashed potato, salted butter, cream and salt to the edamame paste and mix it well. Spread the mixture evenly on a flat tray.
Steam the tray for 5 minutes and keep it aside to cool. Once the mixture has cooled down, take 100gm of this edamame filling and mix it with the truffle paste in a bowl.Season it as per your taste and cling wrap the bowl and place it in the refrigerator.
To prepare the dim sum, mix wheat starch, potato starch and water. Knead the mixture till the dough forms a ball. Dough should be smooth elastic.
Use a drinking water glass with about 2 inches diameter and cut circles out of the dough. Stack and set aside.
Lay out the dumpling wrappers and fill it with 1 tbsp or more of the filling. Fold over the dumplings in the shape you like and pinch to seal.
Steam the dim sum in the steamer for about 2 minutes. Serve hot and garnish it with shredded carrot.
