How to make Ulta Vada Pav

Inside-out vada pav is just a fun flip of all the ingredients that make the regular vada pav. Instead of using a pav to sandwich the vada in between, this recipe uses a potato vada to hold the bun in the middle.

Ingredients of Ulta Vada Pav

  • For the potato
  • 1 cup Boiled and mashed potatoes
  • 1/4 cup Chopped onions
  • 1 tsp Chopped ginger garlic
  • 1/4 cup Chopped coriander
  • 1 tsp Mustard Seeds
  • 5-6 Curry Leaves
  • A pinch of Hing
  • 1/2 tsp Haldi
  • 1/2 tsp Red chilli powder
  • Salt as required
  • For besan batter
  • 1 cup Besan
  • 1 tsp Ajwain
  • Salt as required
  • A pinch of Haldi
  • For bread slice
  • 2 Bread Slices
  • Mint chutney
  • Garlic chutney

How to Make Ulta Vada Pav

In a pan, heat some oil and add hing, mustard seeds, curry leaves, onions, ginger garlic and mix for a while.

Once the onions are soft, add haldi, red chilli powder and salt. Mix everything well.

Now add the mashed potatoes, coriander leaves and mix everything well. Once done take off the heat and let it cool.

Prepare a besan batter by mixing besan, ajwain, salt and haldi with some water in a bowl. Make the batter semi liquidy.

For the bread, toast it in butter, once crispy; apply green chutney and garlic chutney on both sides.

Cut the bread into small pieces that can fir inside the potato vada.
7.
Now take a medium size mashed potato ball and flatten it out in your hand.
8.
Place a bread piece in the middle and gently cover it with the potato mixture on all sides until a smooth ball is formed.
9.
Dip the potato ball in a besan batter and fry until golden brown.
10.
Serve hot and enjoy.
