How to make Veg Jaipuri

Veg Jaipuri is basically a curry made with a variety of seasonal vegetables along with a pool of aromatic spices. On days when you don't feel like preparing a wholesome meal, you can try this recipe along with your usual chapati and papad as sides.

Ingredients of Veg Jaipuri

  • 3 Medium Chopped Onions
  • 2 medium Chopped Tomatoes
  • 1 Chopped Capsicum
  • 1/2 cup Chopped Carrots
  • 1/2 cup Green Peas
  • 1/2 cup Cubed Paneer
  • 1/4 cup Tomato puree
  • 1 tsp Garam Masala
  • to taste Salt
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric
  • 7-8 Cashew Nuts
  • 1 tbsp Coriander Seeds
  • Coriander Leaves
  • 2 tbsp Ghee

How to Make Veg Jaipuri

  • 1.To begin with, heat ghee in a pan and add whole coriander seeds along with cashew nuts to give curry a unique and subtle flavour.
  • 2.Then add, slit green chillies and sauté everything for 4-5 minutes. Once done, grind them into a fine powdery paste.
  • 3.For jaipuri gravy, take chopped green beans, carrot and peas. Half boil them on medium flame.
  • 4.After that, heat ghee in the pan again and add finely chopped onions, ginger and garlic. Keep sauteeing the onion until they get brown in colour.
  • 5.Now, add chopped tomatoes and cook until they turn soft and mushy. Now add Garam masala powder. Mix everything well.
  • 6.Once done, add powdery mixture along with boiled vegetables, chopped capsicum and tomato puree.
  • 7.Add salt according to your taste. After that add paneer cubes along with fresh cream and mix everything well.
  • 8.The last step is to garnish it with some freshly chopped coriander leaves (cilantro) and serve hot paratha, roti or garlic naan.

Recipe Notes

Please note: If the gravy looks too thin then let the sabzi simmer until it thickens. You can also use your preferable veggies while making this curry.
