How to make Veg Jaipuri

Veg Jaipuri is basically a curry made with a variety of seasonal vegetables along with a pool of aromatic spices. On days when you don't feel like preparing a wholesome meal, you can try this recipe along with your usual chapati and papad as sides.

Ingredients of Veg Jaipuri

  • 3 Medium Chopped Onions
  • 2 medium Chopped Tomatoes
  • 1 Chopped Capsicum
  • 1/2 cup Chopped Carrots
  • 1/2 cup Green Peas
  • 1/2 cup Cubed Paneer
  • 1/4 cup Tomato puree
  • 1 tsp Garam Masala
  • to taste Salt
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric
  • 7-8 Cashew Nuts
  • 1 tbsp Coriander Seeds
  • Coriander Leaves
  • 2 tbsp Ghee

How to Make Veg Jaipuri

To begin with, heat ghee in a pan and add whole coriander seeds along with cashew nuts to give curry a unique and subtle flavour.

Then add, slit green chillies and sauté everything for 4-5 minutes. Once done, grind them into a fine powdery paste.

For jaipuri gravy, take chopped green beans, carrot and peas. Half boil them on medium flame.

After that, heat ghee in the pan again and add finely chopped onions, ginger and garlic. Keep sauteeing the onion until they get brown in colour.

Now, add chopped tomatoes and cook until they turn soft and mushy. Now add Garam masala powder. Mix everything well.

Once done, add powdery mixture along with boiled vegetables, chopped capsicum and tomato puree.

Add salt according to your taste. After that add paneer cubes along with fresh cream and mix everything well.

The last step is to garnish it with some freshly chopped coriander leaves (cilantro) and serve hot paratha, roti or garlic naan.

Recipe Notes

Please note: If the gravy looks too thin then let the sabzi simmer until it thickens. You can also use your preferable veggies while making this curry.
