Ingredients of Yummy In The Tummy Lunch Box

  • 1/2 cup glutinous rice flour
  • Salt, to taste
  • 1/2 cup water
  • 1 + 1 tbsp oil
  • 1 tbsp chopped garlic
  • 1/4 cup water
  • 1 tbsp gochujang
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tsp gochugaru
  • 1 tbsp sesame oil
  • Sesame seeds and spring onions, for garnish
  • 1/4 cup mozzarella cheese

For tteokbokki: Firstly take a kadai and add 1⁄2 cup water, salt & oil and let it come to a boil 2. Now add 1⁄2 cup rice flour and start mixing (you have to mix continuously for around a minute).

Turn off the flame and let the mixture come to room temperature. Knead it to a smooth dough (it will take around 5-6 minutes and feel free to add little oil).

Roll it and cut heart shape with a cookie cutter. Steam the cute heart tteokbokki for 10-12 minutes on medium flame. Transfer these in ice cold water.

For sweet & spicy sauce: Take a kadhai and add 1 tbsp oil, garlic and fry for some seconds. Add 1⁄4 th cup water, gochujang, sesame oil, soya sauce, sugar, gochugaru and let the mixture simmer on low flame.

Add prepared tteokbokki and let it cook for 7-8 minutes on low flame. Finally add mozzarella cheese, sesame seeds and spring onion and fill the lunch box with it.
