There's something about soft and puffy idlis that just brighten up our day. The delightful South Indian breakfast combination of idli sambar has found fans across the country, but you would be surprised to know of the kind of idlis that do exist in the world. From oats idli to chicken idli and to fried idli, there are endless ways in which you can experiment with this scrumptious treat and this vegetable idli by food vlogger Reshu is one fine example.
In this recipe, you would need to make a quick sooji or rava batter. Yes, it is not your traditional rice batter, but a tad healthier one made with rava. In a bowl, add rava and curd, mix it well. Try to take curd that is sour for elevated flavour, now add water, and salt as required. Give everything a good mix and put it aside for 30 minutes.

Now in a pan, make a tadka of mustard seeds, curry leaves, hing, chana dal. Roast it well and then start adding vegetables of your choice. In this recipe, Reshu has used capsicum, onion, and carrots. Sautee them well. Keep the vegetables crunchy, do not soften them a lot. Now, add this vegetable tadka to the sooji batter, mix it well and place them in the idli mould with the help of a spoon. Let it steam. Your tadka veg idli is ready!
