Protein-Rich Egg Recipe: Eggs In Peppers Recipe
3 bell peppers – 1 yellow, 1 red, 1 green (capsicum)
Pepper and salt to taste
1-2 tablespoons coriander leaves
Grated cheese (optional)
Mixed herbs (optional)
Lob off the ends of bell peppers and slice the middle part into 3-4 hollow rings.
Heat some oil or butter in a non-stick pan.
Place 3-4 pepper rings on the pan. Flip when one side is fairly cooked. Crack 1 egg inside each ring.
Sprinkle salt and pepper and let it cook till the egg white is set.
Repeat with other rings and eggs the same way.
Top the pepper eggs with some coriander leaves, herbs and grated cheese (optional).
Serve hot or cold.
You can use single bell pepper if you don't have all three varieties in your kitchen. But, remember, more the colours, more happy your kids would be to eat this delicious, protein rich egg dish.
