If you are even slightly aware of Indian cuisine, you would know that the country has no dearth of desserts. Each state has its own set of signature dishes. Most Indian desserts are layered and have such a distinct quality to them that you would not find anything remotely similar anywhere else in the world. But, we have a bunch of simpler desserts too. These desserts are the crown jewel of any festive spread. They are easy to cook but have a fan following that traverses regional boundaries. Basundi is one such milk-based dessert that is popular in the states of Maharashtra and Gujarat. Basundi is sweet, thickened milk flavoured with cardamom and a host of chunky nuts and dry fruits. It can be seen as a close cousin of rabri.
Normally, thickening milk for basundi may take hours. But, if you are craving the sweet dish and do not have much time in hand, then you can try this recipe of instant basundi by Mumbai-based blogger and YouTuber Alpa Modi. With the help of the recipe posted on the YouTube channel 'Something's Cooking With Alpa', you can make basundi in a matter of few minutes. Make sure you are very careful while caramelising the sugar; overheating the sugar may burn it. You can enjoy basundi by itself or pair it with piping hot puri.
