If there's one thing that we absolutely love about the Indian cuisine, besides the pool of flavours, is that one can choose from a rich and heavy curry for a lavish spread to a comfy, soothing bowl of dal. Isn't that what you call an expansive cuisine? There's just one thing that, if we say so, makes this cuisine a little sinful is the huge amount of oil we use to make Indian dishes. While it may be elevating the flavour of certain dishes, it might not go down too well with our health. But you'll be surprised to know that you can cook many Indian dishes without a drop of oil!
A simple bowl of dal is the go-to dish for many of us. In fact, no Indian thali is ever complete without dal and spells comfort for millions across the country. Not just that, dal has managed to woo people across borders too. And if on one hand we have dal makhani's rich and buttery flavours, the spicy tinge of dal tadka on the other impresses our taste buds like nothing else. And if you love indulging in the fiery flavours of dal tadka but steer away from dollops of oil or are trying to shed some kilos, we've got the perfect dal tadka recipe for you to try.

In this dal tadka recipe, all you need is wash and soak masoor dal, bring to boil in water with salt and let it simmer. On the other hand, dry roast spices such as turmeric, garam masala, coriander and fenugreek leaves along with onion, ginger and garlic. Add a splash of water if they begin to stick. And add these cooked spices to the simmering dal. The tadka for this is made in the similar way by dry-roasting mustard seeds, cumin seeds, bay leaf, red chilli, curry leaves and asafetida together. You can sprinkle a few drops of water instead of oil. Pour this tadka over simmering hot dal and you can serve it topped with coriander leaves!
