An easy and delicious recipe for sweet and hot chicken drumsticks.
Every Christmas I usually make a glaze for a baked ham. This week I decided to apply the same ingredients to chicken drumsticks instead. Either eaten on their own or served with hash browns, they made for a deliciously cheap, sweet, hot and very easy supper.
The recipe
Put 6 large chicken drumsticks on a baking tray or in a small roasting tin. Then mix 6 heaped tbsp of orange marmalade with 3 tbsp of wholegrain mustard and a grinding of black pepper. Spoon the seasoned marmalade over the chicken and then put the baking tray into the oven for about 30 minutes at 200C/gas mark 6. Serves 2-3.
The trick
Use a piece of foil under the drumsticks. It makes cleaning the dish a lot easier. Watch the drumsticks carefully as they cook. They should be deep golden brown, but they tend to burn easily.
The twist
Serve the drumsticks cold as a lunchbox treat. Add a pinch of flaked chillies to the mix, or a little finely chopped shallot or onion.
