Here's how to make Kunal Kapur's soya chilli Manchurian:
For boiling soya nuggets:
Soybean nuggets (dried) - 2cups
Water: 1 litre
Soya sauce: 3 tablespoons
Salt: ½ teaspoon
Garlic chopped: - 1 teaspoon
Onion chopped: 3 tablespoons
Green chilli chopped: 2 tablespoons
Ginger chopped: 1 teaspoon
For Manchurian Balls
Spring onions chopped - ¼ cup
Coriander chopped - a handful
Salt - a generous pinch
Green chilli chopped – 2 teaspoons
Lemon juice – 3 tablespoons
Pepper powder - ½ teaspoon
Corn starch – 3 tablespoons
Flour all-purpose (maida) – 5 tablespoons
Oil - for deep frying
For Chilli Manchurian Sauce
Oil – 3 tablespoons
Dry red chilli - 2
Garlic chopped – 1 tablespoon
Ginger chopped – 1 tablespoon
Onion chopped - ¼ cup
Green chilli chopped – 2 teaspoons
Yellow Capsicum Diced - ¼ cup
Green Capsicum Diced - ¼ cup
Red Capsicum Diced - ¼ cup
Chilli sauce – 2 tablespoons
Soya sauce (light) – 4 tablespoons
Tomato ketchup - ½ cup
Vinegar – 1 tablespoons
Salt - to taste
Spring onion chopped - a handful
Water/stock – 3 cups
Corn starch – 1 tablespoon
Water – 3 tablespoons
Coriander chopped - a handful

Procedure to make Soya Chilli Manchurian
1) First, you need to boil the soya nuggets. Take soya chunks and boil them in water with chopped garlic, onions, green chilli and a little bit of soya sauce and salt.
2) The next step includes preparing Manchurian balls. For this, take the boiled soya chunks and add chopped spring onions, coriander, salt, lemon juice, pepper powder. Mix some all-purpose flour and the binding agent corn starch. Deep fry the chunks.
3) Prepare a sauce for your recipe. Heat some oil in a pan and put chopped garlic, onion, ginger one by one followed by yellow, green and red diced capsicum. After sautéing the vegetables, put the sauces (chilli, soya, tomato) along with vinegar.
4) The final step includes adding the fried soya chunks to the preparation. Blend it all well and soya chilli Manchurian is ready.
