Indian-style chicken curry is one of the most preferred dishes in a non-veg spread. However, almost every part of the country will have a different version of the iconic chicken dish with slight or major variations. Patiala chicken is one such type of chicken curry, which is as good as all other popular versions. It is spicy, flavourful, creamy and oh-so delicious. Here's the step-by-step recipe of Patiala chicken:
Step 1 - Marinate chicken pieces in a pool of curd, ginger-garlic paste, turmeric powder, red chilli powder, black pepper powder and salt. Marinate for at least half an hour.
Step 2 - Now prepare the gravy. Heat some oil in a pan and add dal chini, hari elaichi, laung and jeera. Once they crackle, add ginger, garlic and onions, saute till onions turn light brown.
Step 3 - Add chopped tomatoes along with turmeric powder, red chilli powder and coriander powder. Add some water and let the tomatoes cook for about 5 minutes.
Step 4 - Add marinated chicken. Mix everything well and cover to let it cook. Also add chopped green chilli.
Step 5 - Prepare another gravy. Heat oil in a pan. Add cumin, chopped ginger and garlic. Add onion bulbs, capsicum cubes, and cook for 2-3 minutes.
Step 6 - Season with turmeric powder, red chilli powder, black pepper powder and coriander powder. Mix well. Add cashew paste to the gravy and some salt.
Step 7 - Add cashew-based gravy to the main gravy and cook everything together for some time. Lastly, add garam masala, kasuri methi and julienned ginger.
