Dahi is possibly one of the most versatile ingredients in our kitchen. It is light, healthy and can be used to prepare a wide range of dishes. From the simplest kadhi to a delicious bowl of shrikhand - one can literally make anything with a bowl of dahi. That's not all. You can also go all fancy with the ingredients and prepare exotic dishes from across the globe. We recently came across one such recipe that instantly tugged at our heartstrings. It's the classic Mediterranean side dish - Labneh. Visit any restaurant offering Mediterranean cuisine, you will find Labneh holding a constant position on a mezze platter.
For the unversed, labneh in simple words is a spicy yogurt cheese made with hung curd, olive oil and spices. However, you can customise the ingredients as per the palate, keeping the hung curd constant. This particular Labneh recipe is shared by celebrity chef Anahita Dhondy. "It's a great dish for the days you want something light yet satisfying. The blistered tomatoes poured over a bed of cold yoghurt, is so simple but it's one of those recipes that once you make it, you'll probably end up making again and again for sure," explains Chef Dhondy. Let's take a look.
