Mira Rajput is a big-time foodie and often embarks on culinary expeditions. She is also generous enough to share some of them on social media. In her recent Instagram Stories, Mira offered us a glimpse into another delectable cuisine. This time, it was a “Mexican fiesta”. On a table, a range of items was kept on display, triggering our taste buds. To begin with, there were crispy tortillas, a bowl of shredded cheese, chopped mixed salad and green veggies, rajas con crema, burnt mushrooms, spicy rice bowl, and cochinta pibil. The culinary delicacies do not end here. Her Mexican food session also included mole sauce, salsa roja, salsa verde, and pico de gallo. A large bowl of tortilla chips, accompanied by thick and creamy tartar sauce, completed the Mexican extravaganza for Mira Rajput.

But that's not all. Keeping in mind the scorching rays of the summer sun, she indulged in the pleasure of a plethora of mango dishes. There were juicy mango chunks, presented in the shape of a cake, mango rabdi topped with small slices of the fruit, mango kheer, and lip-smacking mango sherbet. The intermingling of foreign and desi food was clear proof that Mira was a connoisseur of all things palatable.

1. Mexican Stuffed Bell Peppers
All you need to do is add bell peppers to a hot, boiling pan, sprinkle them with salt, and place them on a baking dish. For the filling, saute onions, mix them with black beans, rice, and chopped tomatoes. Next, add red chilli powder, garlic, grated mozzarella cheese, capsicum, and cumin. Finally, garnish with some coriander leaves and serve the dish hot.
2. Veggie Mushroom Tacos
To make these tacos, start by cutting capsicums into strips. Pour oil into a pan and add mushroom, onion slices, and capsicum. Stir-fry the mixture before adding seasoning. Then, turn off the heat and let the ingredient-infused mixture cool off. Place the blend as fillings on taco shells and top it off with shredded lettuce and sour cream.
