  • 2 Cups Carrot Puree
  • 2 tsp Sesame Oil
  • 1 tsp Ginger Chop
  • 1 cup Vegetable Stock
  • 1 tsp White Vinegar
  • A pinch of Salt

How to Make Asian Spicy Carrot Soup with Sesame & Ginger

For Carrot Puree: Once all the ingredients are measured, put them in a bowl & keep them separately.
Take some water in a saucepan and give it a boil.
Once the water started rolling put diced cuts of carrot and add a pinch of salt (it enhances the colour).
After 12 minutes of blanching, check the texture of the carrots, it should be soft, take out them and immediately put it into ice water to prevent it from overcooking, and cool it.
Put the blanched carrots diced into a mixer grinder and blend into a smooth puree.
For Soup: Once the carrot puree is ready, put it in a bowl & keep it with other ingredients.
Heat a saucepan with sesame oil.
Once the oil is heated add chopped ginger and give it a light stir with the help of a spatula till it leaves its rawness or releases flavour.
After ginger, add all the carrot puree into the pan and all the seasonings and stir well to mix all the seasoning.
Add the measured vegetable stock/water into the pan, add vegetables, mix well and let it simmer for 2-3 minutes to cook the veggies and soak the flavour.
After simmering, increase the flame and add corn flour slurry according to your desired consistency.
For Platting: Pour the soup into a medium-sized bowl (250ml) in each with the help of a ladle and garnish with some chopped spring onion greens and drizzle some chili oil on top, now your Asian Spicy Carrot Soup is ready to serve.
