  • 450 gms black cod
  • 45 gms red capsicum
  • 45 gms yellow capsicum
  • 35 gms cucumber
  • 45 gms fried tofu
  • 2-3 gms lemon zest
  • 10 ml lemon juice
  • 25 gms parsley leaves
  • 5 gms pine nuts
  • 2 gms fresh garlic
  • 15 ml olive oil
  • 2 gms pea sprout
  • 2 gms edible flower
  • Salt and pepper

How to Make Black Cod & Vegetable Tartar With Parsley Pesto

Cut black cod, red capsicum, yellow capsicum, tofu and cucumber in cubes.

Marinate them with salt, pepper, lemon zest and lemon juice.

In a blender blend parsley with pine nuts, garlic and olive oil, strain it, adjust seasoning and keep aside.

Take a square mould, arrange vegetables at the bottom and marinated fish on top, garnish with pea sprouts and edible flower. Serve with parsley pesto.
