- 450 gms black cod
- 45 gms red capsicum
- 45 gms yellow capsicum
- 35 gms cucumber
- 45 gms fried tofu
- 2-3 gms lemon zest
- 10 ml lemon juice
- 25 gms parsley leaves
- 5 gms pine nuts
- 2 gms fresh garlic
- 15 ml olive oil
- 2 gms pea sprout
- 2 gms edible flower
- Salt and pepper
How to Make Black Cod & Vegetable Tartar With Parsley Pesto
- 1.Cut black cod, red capsicum, yellow capsicum, tofu and cucumber in cubes.
- 2.Marinate them with salt, pepper, lemon zest and lemon juice.
- 3.In a blender blend parsley with pine nuts, garlic and olive oil, strain it, adjust seasoning and keep aside.
- 4.Take a square mould, arrange vegetables at the bottom and marinated fish on top, garnish with pea sprouts and edible flower. Serve with parsley pesto.
