About Broccoli and Cheddar Crepes Recipe: Layers made of thin crepes, smeared with sauce, one over another, sprinkled with grated cheese, bread crumbs and melted butter, baked golden.

Ingredients of Broccoli and Cheddar Crepes

  • 1 Head broccoli (blanched), chopped
  • For the crepes:
  • 1 1/2 Cup Flour
  • A pinch of Salt
  • A pinch of Zataar spice
  • 1/2 Cup Olive oil
  • 1 tsp White wine vinegar
  • A pinch of Soda bicarbonate
  • Few Parsley leaves, chopped
  • 10 Ml Milk
  • A pinch of Black pepper (cracked)
  • 2 stalks Spring onions
  • 1/2 Red bell pepper, roasted
  • 150 Gram Corn kernels
  • 2 Garlic cloves
  • 1 tsp White wine
  • 120 Ml Cream
  • 80 Gram Cheddar cheese grated
  • Few Oregano sprigs
  • 2 Tbsp Olive oil

How to Make Broccoli and Cheddar Crepes

  • 1.Blanch the broccoli.
  • Prepare the crepe batter:
  • 1.In a bowl add flour, zataar spice, salt, olive oil, milk, red wine vinegar and soda bicarbonate; give it a nice whisk.
  • 2.Chop the broccoli, spring onions and a big clove of garlic.
  • 3.Sauté the spring onions in olive oil along with the garlic, roasted red bell pepper and corn.
  • 4.Add the broccoli and deglaze with white wine. Add salt to season.
  • 5.Add ½ a cup of cream and reduce.
  • 6.Now add the grated cheese, few leaves of oregano and season to taste with salt and pepper.
  • 7.Reduce the cream along with the rest of cheese to make a thick sauce of a coating consistency.
  • 8.Cool down the mixture.
  • Prepare the crepes:
  • 1.Put a spoon full of the batter on a non stick pan to make thin crepes.
  • 2.Grease a baking dish and lay the crepes in one layer.
  • 3.Spoon the sauce over the crepes and layer with another crepe, do this for a few layers.
  • 4.Sprinkle grated cheese, bread crumbs and a little melted butter on the top and bake for 20 minutes at 180 degree C.
