Ingredients of Broccoli and Cheddar Crepes

  • 1 Head broccoli (blanched), chopped
  • For the crepes:
  • 1 1/2 cup Flour
  • A pinch of Salt
  • A pinch of Zataar spice
  • 1/2 cup Olive oil
  • 1 tsp White wine vinegar
  • A pinch of Soda bicarbonate
  • Few Parsley leaves, chopped
  • 10 ml Milk
  • A pinch of Black pepper (cracked)
  • 2 stalks Spring onions
  • 1/2 Red bell pepper, roasted
  • 150 gram Corn kernels
  • 2 Garlic cloves
  • 1 tsp White wine
  • 120 ml Cream
  • 80 gram Cheddar cheese grated
  • Few Oregano sprigs
  • 2 tbsp Olive oil

How to Make Broccoli and Cheddar Crepes

Blanch the broccoli.

Prepare the crepe batter:

In a bowl add flour, zataar spice, salt, olive oil, milk, red wine vinegar and soda bicarbonate; give it a nice whisk.
Chop the broccoli, spring onions and a big clove of garlic.
Sauté the spring onions in olive oil along with the garlic, roasted red bell pepper and corn.
Add the broccoli and deglaze with white wine. Add salt to season.
Add ½ a cup of cream and reduce.
Now add the grated cheese, few leaves of oregano and season to taste with salt and pepper.
Reduce the cream along with the rest of cheese to make a thick sauce of a coating consistency.
Cool down the mixture.

Prepare the crepes:

Put a spoon full of the batter on a non stick pan to make thin crepes.
Grease a baking dish and lay the crepes in one layer.
Spoon the sauce over the crepes and layer with another crepe, do this for a few layers.
Sprinkle grated cheese, bread crumbs and a little melted butter on the top and bake for 20 minutes at 180 degree C.
